    Why this is the best pumpkin spice pancake recipe

    This is a quick and easy breakfast or brunch recipe. Mix the dry ingredients and the wet ingredients, then combine them. Use a measuring cup to pour the mixture onto the griddle. That's all there is to it!

    These pumpkin pancakes are delicious! The combination of pumpkin puree, chocolate chips, and pumpkin pie spice makes this a breakfast treat that will delight both kids and adults alike. You won't want to stop at one!

    Most of the ingredients for this easy recipe are common and easy to find. You probably have most of the simple ingredients to make this easy pancake recipe already in your pantry. The vanilla bean paste used in this recipe can be purchased on Amazon, but if you're in a pinch, you can substitute vanilla extract.

    The ingredients for pumpkin spice pancakes are inexpensive. Flour, sugar, and canned pumpkin puree: these are totally affordable ingredients! I think this recipe cost me less than $10 total, including the chopped pecans.

    • Stovetop griddle

    • Baking powder - This helps the pancakes rise and get fluffy.
    • Salt - This brings out the flavor in the other ingredients and also helps the pancakes rise and get fluffy.
    • Sugar - Obviously, this makes the pancakes sweet like pumpkin pie, but it serves a second purpose. Sugar caramelizes on the griddle, helping pancakes get that golden-brown surface.
    • Chopped pecans - These give the pancakes a little crunch.
    • Chocolate chips - These are just fun and add a little burst of sweet chocolate in every bite.
    • Melted butter - Pancakes need fat or they will have a dry, crumbly texture.
    • Pumpkin puree - This is what makes them pumpkin pancakes!
    • Vanilla bean paste - I have completely switched from vanilla extract to vanilla bean paste. Vanilla bean paste is made from highly concentrated vanilla extract that is mixed with actual crushed vanilla beans. It has a stronger and richer vanilla flavor. If you are in a pinch, you can use an equal amount of vanilla extract (or a little more).
    • Large eggs - These turn the pancakes from flour and butter into actual cakes. Without eggs, your pancakes will be crumbly.
    • Pumpkin pie spice - I love the Cinnamon Plus spice blend from The Pampered Chef, but you can use any pumpkin pie spice, apple pie spice, or even plain cinnamon.
    • Milk - You will need liquid to create a batter.

    How to make healthy pumpkin pancakes

    1. Combine flour, baking powder, salt, and sugar. When well blended, stir in pecans and chocolate chips.

    2. Mix the butter, pumpkin, vanilla, eggs, spices, and a tablespoon of sugar; then add to the dry ingredients.

    3. Add milk until the consistency of the batter is how you like it. It's easier to get batter right when using purees if you add milk little by little. You will want the pancakes to be pretty thin because the puree doesn't fluff up, and thinner pancakes will cook more evenly.

    Substitutions & variations

    You can use ground cinnamon with a pinch of nutmeg or apple pie spice instead of pumpkin pie spice.

    Swap pumpkin puree for applesauce for a different fall flavored breakfast.

    Mash a ripe banana into the batter for a sweeter flavor.

    Top pumpkin spice pancakes with chocolate sauce or a brown sugar glaze for a more indulgent treat.

    Storing leftovers

    Cool completely: always let pancakes cool to room temperature before storing so they don't get soggy.

    Stack with parchment paper: Place a sheet of parchment paper between each pancake to prevent sticking.

    Store in an airtight container and keep at room temperature for a few hours or refrigerate for up to 2 days.

    Freeze individually: cool completely, then lay pancakes in a single layer on a baking sheet. Freeze until solid. Once frozen, separate the layers with parchment paper and place them in a freezer-safe bag or container.

    Reheat from the freezer: warm in a toaster, oven, or microwave. There's no need to thaw first.
