What you'll need to make Thai chicken pizza
Equipment
- A small saucepan is ideal for peanut butter, which is thick and prone to burning, so it lets you warm it slowly and evenly.
- Chicken shredder - if you have one, it makes shredding the chicken so much faster. If you don't have one (what are you waiting for?), use two forks. It is always easier to shred warm chicken, so if you're using leftovers, you may want to zap them in the microwave for a few seconds to warm them up before trying to shred them.
- Pizza stone that's oven safe to 500ºF. You don't have to have one, but if you do, it helps you get a better texture, better browning, and a more pizzeria-style crust at home.
- Pizza Peel - This paddle helps you not burn yourself putting the pizza into and out of the oven and prevent lost toppings.
- A pizza cutter that's sharp enough to create even slices.

- balsamic vinegar - You need an acid in this recipe, and I chose balsamic vinegar. You could substitute lime juice.
- granulated sugar - You need a little dash of sweet in the sauce. You could also use sweet chili sauce.
- brown sugar - Same as above. Brown sugar has a different flavor than white sugar because it has molasses mixed in.
- low-sodium soy sauce - This is the (not so) secret ingredient in the peanut sauce. It gives the sauce a strong umami flavor without overpowering the peanut butter. I always use low sodium soy sauce because I prefer the flavor but you can use whatever you have. Note that soy sauce sometimes contains gluten, so if you are making a gluten-free pizza, be sure to read the label to ensure your soy sauce is safe.
- crushed red pepper flakes - This sauce is not spicy, but the pepper flakes add a note to the peanut sauce that you will miss if you leave them out. The sauce will taste like something is missing.
- garlic powder - You can use whole garlic cloves if you want to press them, but garlic powder is simpler in this recipe.
- peanut butter - I suggest creamy, but if you want to use crunchy, feel free.
For the chicken pizza:
- pizza dough - The link goes to my personal favorite pizza dough recipe. It makes a thicker crust, so if you prefer a thinner crust, you will need to cut it down into smaller segments and roll it out thinner.
- flour to roll out the pizza dough - You need a pinch of flour or the dough will stick.
- shredded chicken - I usually use a rotisserie chicken that I pick apart and stick in my chicken shredder, but you could use any leftover chicken or even cook up a breast and shred that.
- shredded carrots - I buy carrots pre-shredded in the produce section of my grocery store, but you are welcome to shred them yourself with a box grater (or whatever tool you want).
- fresh mozzarella - Mozzarella melts the best, and that's why I recommend you use it. I have used slices of mozzarella but if you prefer shredded, that is fine to use.
- roasted peanuts - These add a nice crunch and complement the peanut butter sauce.
How to make Thai chicken pizza with peanut sauce
- Preheat the oven to 500°F.
- Combine the balsamic vinegar, both sugars, soy sauce, red pepper flakes, and garlic powder in a small saucepan. Set the saucepan over medium heat and give the ingredients a quick stir. Let the mixture come to a boil.
- As soon as the mixture starts to boil, remove it from the heat and stir in the peanut butter until it is fully incorporated. Set aside.
- Divide the pizza dough into three equally sized pieces and roll each out on a floured surface to create three 8-inch pizzas.
- Top the pizza dough with some of the Thai peanut sauce, followed by shredded chicken, shredded carrots, and fresh mozzarella torn or cut from the ball.
- Transfer the pizzas to a pizza stone or large baking sheet. Cook each pizza for 8 minutes, or until the crust is golden brown.
Substitutions & variations
We like to use fresh mozzarella logs or balls for this recipe. You can find these at most major grocery stores near the deli section. If you can't get your hands on fresh mozzarella, you can use plain shredded mozzarella or pizza cheese.
Thinly sliced green or red bell pepper and red onion also make a great addition to this pizza.
You can bake your pizza on a baking sheet or a pizza stone, whichever you have. If you are using a pizza stone, then you may want to let it heat up before placing your pizza on it. (Follow the instructions, as mine do not require heating before placing the pizza on them, but most do.) If you are using a baking sheet, then you will want to rub it down with a little bit of olive oil so that your pizza doesn't stick.
You can use pre-made pizza crusts (store-bought pizza crust) or homemade pizza dough in this recipe.
Swap the shredded chicken for air fryer coconut shrimp or thinly sliced flank steak.
Additional pizza topping ideas: fresh basil, bean sprouts, fresh cilantro, pickled red onions, green onions, a squeeze of lime, and a drizzle of sweet chili sauce.
Storing leftovers
You can store your leftover pizza in a zippered plastic bag in the fridge for up to 4 days.
