What you'll need to make Peanut Butter Pizza Brownie
Equipment
- 10-inch pizza pan - This gives you the pizza shape you want to create, and it makes it easy to slice into wedges. You can also use a pizza stone if you have one.
- Electric mixer - When you combine sugar and butter, an electric mixer ensures they become light and fluffy. You can't really do that with a whisk.
- Sifter - This makes sure the dry ingredients are evenly combined and have air mixed in, for a lighter brownie texture.
- Wire rack - This allows air to circulate around the entire brownie pizza, so it cools evenly and quickly and doesn't get over-baked.
Ingredients
See the printable recipe card at the bottom of the page for all measurements and nutritional information.
For the pizza brownie base
- unsalted butter - This should be soft but not melted. The easiest way to achieve that is to let the butter sit on the counter for a few hours. Don't worry, butter takes days to spoil at room temperature. Also, it doesn't matter whether you use salted or unsalted butter. You won't be able to tell any difference in the finished brownie.
- white sugar - You're going to cream the butter and sugar together with a mixer. You need both butter and sugar to make that process happen properly.
- brown sugar - This should be tightly packed.
- eggs - These help the brownie to form a batter rather than just being a paste.
- vanilla bean paste - I prefer vanilla bean paste to vanilla extract because the paste has a much stronger and richer vanilla flavor. Vanilla extract is made by soaking vanilla beans in alcohol and then removing the beans. Vanilla bean paste is made by mixing crushed vanilla beans into concentrated vanilla extract. You can use them interchangeably in equal amounts.
- all purpose flour - Flour gives your brownie pizza structure. It's okay to use a cup-for-cup gluten-free baking mix.
- unsweetened cocoa powder - This is what makes your brownie chocolate-flavored. I used plain old Hershey's in the brown box, but you can use any brand or style of cocoa.
- sea salt - You're just going to use a pinch, and you should not leave it out. The salt enhances the other flavors in the brownie, but more importantly, it is a leavening agent that helps the brownie to puff up a bit rather than just being a flat puddle of batter.
For the chocolate peanut butter ganache
- semi-sweet chocolate chips - I always use semi-sweet chocolate for ganache, but you could use any style. I think milk chocolate might be too sweet in this recipe, but it's your call. Dark or a combination of two flavors would also be fine.
- peanut butter - I suggest creamy peanut butter, but if you like crunchy better, go for it.
For pizza brownie toppings
You can see my suggested garnish for the brownie pizza is heavy on the candy. If you don't want to use that much, feel free to cut back. I don't think you could possibly use more, but feel free to challenge that assertion!
- Reese's Peanut Butter Cups - Some of these can be chopped for easier slicing of the finished brownie pizza.
- Reese's Mini Peanut Butter Cups - About half of these should be cut in half.
- Reese's Pieces
- Reese's Peanut Butter Chips
How to make Easy PB Brownie Pizza
- Preheat oven to 350°F. Lightly grease a 10-inch pizza pan with butter or butter-flavor cooking spray. (Never use cooking spray on a pizza stone, as this will make your stone sticky and be very hard to remove.)
- In a large bowl, mix together the softened butter, white sugar, and brown sugar on medium speed.
- Add eggs and vanilla bean paste and mix until glossy and smooth.
- Sift in flour, cocoa powder, and salt. Use mixer on low or fold in with a spatula until just combined. Do not overmix.
- Pour batter into the prepared pan and smooth the top. Bake for 20-25 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs. Do not overbake. An overbaked brownie is dry and hard.
- Immediately set the pizza pan on a wire rack. Cool pizza brownie completely in the pan before adding the toppings. When the brownie is room temperature, make the ganache. In a microwave-safe bowl, combine chocolate chips and peanut butter. Microwave in 30-second intervals, stirring thoroughly each time, until melted and smooth (about 1 minute total). Make a little extra for drizzling.
- Pour the ganache over the cooled brownie base and spread evenly to the edges, as you would with pizza sauce.
- While the ganache is still soft, top with Reese's PB Cups, Mini PB Cups, Reese's Pieces, and peanut butter chips (or whatever Reese's candies you want).
- If you're in a hurry, you can refrigerate the brownie pizza for 30-60 minutes or until the ganache is set. Otherwise, let it sit at room temperature for 2-3 hours, and the ganache will set up.
- Cut into wedges and serve. Brownie can be served chilled or at room temperature.
Substitutions & variations
You can swap Reese's pieces and cups for other chocolates like Rolos, Kit Kats, M&M's, or chopped Snickers.
You can add chocolate chips, chopped peanuts, or crushed pretzels to the brownie batter.
To shortcut the brownie pizza, you can use a boxed brownie mix instead of creating the brownie crust from scratch.
Storing leftovers
Place individual slices in an airtight container in between layers of parchment paper. Store in fridge or on the counter.
Freezer: freeze slices individually. Wrap each piece in a small sheet of parchment. Flash-freeze for 1 hour. (That means to place them in the freezer in a single layer so they can get hard before you put them in permanent storage. But don't let them flash freezer for too long because they're aren't properly wrapped and will get freezer burn if you leave them for a day or two like that.) Wrap parchment-wrapped slices again in plastic wrap, then store in a freezer-safe container or bag. You can thaw on the counter for a few hours.
