What you'll need to make the best Turkey Cheese Ball
Equipment
- Electric mixer - You will need to beat the cream cheese until it's smooth, and then add the spices. The easiest way to do this is using a handheld mixer, but you could do it with a spatula if you needed to.
- Plastic wrap - This is how you'll make the ball shape without making your hands a cheesy mess.

Ingredients
For the turkey cheeseball
- Cream cheese - This needs to be soft. The best way to do that is to leave it out on the counter for a few hours before you need it.
- Shredded cheddar cheese - You need more than just cream cheese in your cheeseball. You can really use any type of cheese that you like to eat raw including sharp cheddar, white cheddar, or pepper jack.
- Garlic powder - If you don't like these spices, feel free to change them to fit your preferences.
- Smoked paprika
- Chopped pecans or walnuts - These are to roll the cheeseball in to make it brown. They need to be in very small pieces, almost crumbs.
- Salt & pepper to taste
- Rounded crackers - These make the tail of the turkey.
- Mini pretzels - These will also be part of the turkey's tail.
- Round cracker - You need one nice, large, round cracker for the turkey's face.
- Sugar eyes - For the turkey's face, you will need 2.
- Glazed sunflower seeds - You only need one yellow sunflower seed, for his nose.
- Heart-shaped sprinkles - You only need one heart-shaped sprinkle, for his waddle.
- Breadstick crackers - These are the smooth little crackers that make the turkey's legs. You only need 2.
For the turkey tail
- Cucumber - This needs to be a full-size cucumber, not a mini one. You will cut it into 4-inch strips to build up the tail.
- Green bell pepper - You will cut this into pointed 4-inch strips to make the tail.
- Carrot - This needs to be a full-size carrot, not a baby carrot. It will be cut into 4-inch strips for the tail. Peel it first.
- Celery stalks - Remove the leaves and cut into 4-inch sticks for the tail.
- Red pepper strips or pickled chili peppers - These are also part of the tail. You could use a fresh red bell pepper if you want, but the chili peppers give this part of the tail a nice texture contrast.
For the platter
- Fall leaf-shaped tortilla chips - These finish the cheese ball with a beautiful complement, and you can make them at home really easily.
- Fresh parsley
How to make easy Turkey Cheese Ball
- Beat the softened cream cheese until it is smooth. Add the spices, grated cheese, and salt and pepper to taste and combine.

- Place the lump of cheese on a piece of plastic wrap, and use the plastic wrap to roll it into a smooth ball. This will become the turkey's body.
- Place the nuts in a zippered plastic bag and crush them with a rolling pin. Roll the cheese ball in the crushed nuts.
- Wrap in plastic wrap and chill for one hour.
- Place the ball in the center of the board. Attach the round cracker for a head by scraping off a little of the nuts and sticking the cracker to the cheese mixture underneath. It is light and will stick easily.

- Brush the cracker with honey around the candy eyes, beak, and beard and stick them in place.
- Form the turkey tail on the platter. Remove the seeds and guts from the pepper, then cut it into strips. Chop the celery and cucumber into 4-inch sticks.

- Alternate celery sticks, vegetables, and red pepper strips to create a colorful tail, as shown in the photos.
- Add 2 breadsticks under the body for the feet. Add pretzel and rounded cracker feathers from the turkey body. Garnish the tail with parsley and arrange the pretzels and fall leaves chips on the bottom of the board.

Substitutions & variations
Use whatever dippers you want. You can add yellow, red, or orange bell pepper in addition to the green. You can use pretzel sticks instead of round pretzels.
Use a different shredded cheese or a combination of cheeses to change the flavor. Sharp cheddar gives the cheese ball a stronger flavor, while mild cheddar, Colby Jack, Monterey Jack, or pepper Jack will each give it a slightly different personality.
Add finely chopped fresh herbs, chives, green onions, onion powder, ranch seasoning, or your favorite savory seasonings along with the smoked paprika and garlic powder, or switch them out and totally change the flavor.
You can substitute another finely chopped nut. Pecans, walnuts, and almonds all work well. For a nut-free version, try dried cranberries, crushed crackers, pretzels, crispy bacon, shredded cheese, or finely chopped herbs instead.

Storing leftover Turkey Cheese Ball
Remove the crackers, pretzels, vegetables, and face from the cheese ball before storing it. They can become soft and soggy in the refrigerator.
Wrap the leftover cheese ball tightly in plastic wrap or transfer it to an airtight container. Store it in the refrigerator for up to 3-4 days.

Let the cheese ball sit at room temperature for about 15-20 minutes before serving leftovers. This will soften the cheese slightly and make it much easier to spread.
I don't recommend freezing a cheese ball made with cream cheese. Freezing and thawing can change the texture and make the cheese mixture grainy or watery.
