- Mason jars - pint size - I like my overnight oats in pint or even half-pint jars, but if you prefer, you could double the recipe and make it in a bowl with an airtight lid and just spoon out the amount you want to eat in the morning.

- Old-fashioned rolled oats - These may also be labeled "rolled oats." Same thing. You do NOT want Quick Oats or Instant Oats.
- Whole milk - It's okay to use low-fat milk or unsweetened vanilla flavor almond milk or another dairy milk.
- Brown sugar - You can substitute this with an alternate sweetener if you want, but don't leave it out. You need a sweetener to balance the bitterness of the cocoa powder or your oats will be inedible. Honey, maple syrup, and no calorie sweeteners will all be fine. Use a similar amount and taste to see if you need to add more.
- Unsweetened cocoa powder - I am not a cocoa powder snob. I use plain old Hershey's in my chocolate oats. You can use whatever brand or variety you want.
- Semi-sweet chocolate chips - If you have a real sweet tooth, you can use milk chocolate chips, but I prefer the semi-sweet in this recipe. You could also use dark if you wanted a healthy chocolate or even white chips if you wanted. Or peanut butter or butterscotch chips. They're your oats. Use whatever you like.
- Greek yogurt - This is optional and adds creaminess and protein.
- Vanilla bean paste - This is optional. I prefer vanilla bean paste to vanilla extract because the paste has a much stronger and richer vanilla flavor. Vanilla extract is made by soaking vanilla beans in alcohol and then removing the beans. Vanilla bean paste is made by mixing crushed vanilla beans into concentrated vanilla extract. You can use them interchangeably in equal amounts.
- Chia seeds - I like chia seeds in overnight oats because they add fiber, and they get kind of gelatinous when soaked in liquid. They help the oats to set up nicely. These are optional and not pictured.
How to make Chocolate Overnight Oats
- Add all the ingredients to a mixing bowl. Use a spoon to stir the mixture and break up any clumps.

- Stir well, taking care to break up any clumps. Be careful if you're mixing in a jar.
- Place in the refrigerator for at least 8 hours up to 5 days.
- Serve chilled or remove lid and microwave for 30 seconds for a warm breakfast. Stir well after microwaving to eliminate any hot spots.

- Store in the fridge up to 5 days.
Substitutions & variations
You can use dairy milk or any non-dairy milk for this double chocolate overnight oats recipe. Almond milk, oat milk, coconut milk, or cashew milk all work well, but the flavor and creaminess may change slightly depending on what you use. If you want the oats extra thick and creamy, use whole milk and add a spoonful of Greek yogurt.
For the chocolate flavor, cacao powder is classic, but you can use dark cocoa powder for a richer taste. Mini chocolate chips, regular chocolate chips, chopped chocolate, or even white chocolate chips can be stirred in or sprinkled on top. You can also add a little peanut butter, almond butter, or Nutella for a more dessert-like version.
