    It's a simple recipe. This mint chocolate overnight oats recipe uses basic ingredients like oats, milk, cocoa powder, sweetener, and mint extract, so you may already have most of what you need in your kitchen. If not, everything should be easy to find at your local grocery store.

    It's very easy. All you have to do is stir the ingredients together, divide the mixture into jars or containers, and let it chill in the refrigerator overnight. In the morning, give it a quick stir, add your favorite toppings, and breakfast is ready.

    It tastes amazing. The combination of rich chocolate, cool mint, and creamy oats makes this feel almost like dessert for breakfast. It is sweet, refreshing, and filling without being complicated.

    • Plain Greek yogurt - This adds creaminess and protein.
    • Whole milk - It's okay to use low-fat milk or unsweetened vanilla flavor almond milk or another dairy milk.
    • Honey - You may use more or less as desired. Honey is easier to combine with the other ingredients if it's warm. You can substitute this with an alternate sweetener if you want, but don't leave it out. You need a sweetener to balance the bitterness of the cocoa powder or your oats will be inedible. Honey, maple syrup, brown sugar, and no calorie sweeteners will all be fine. Use a similar amount and taste to see if you need to add more.
    • peppermint extract - This is what gives the oats their Thin Mints flavor.
    • old-fashioned rolled oats - These may be labeled "old fashioned oats" or "rolled oats." Same thing. You do NOT want Quick Oats or Instant Oats.
    • Chia seeds
    • unsweetened cocoa powder - I am not a cocoa powder snob. I use plain old Hershey's in my chocolate oats. You can use whatever brand or variety you want.
    • chocolate chips or a chopped chocolate bar  - If you have a real sweet tooth, you can use milk chocolate chips, but I prefer the semi-sweet in this recipe. You could also use dark if you wanted a healthy chocolate or even white chips if you wanted. 
    • Sea salt - Just a pinch of salt.

    How to make Chocolate Chip Overnight Oats

    1. Add all ingredients to a pint jar.

    3. Seal the jar and refrigerate at least 8 hours.
    4. Serve chilled or warm in the microwave before serving. If you want to be fancy, you can garnish with fresh mint leaves.

    Substitutions & variations

    You can make these mint chocolate overnight oats with any milk you like, including dairy milk, almond milk, oat milk, or coconut milk. If you want them thicker and creamier, use Greek yogurt or add a little extra chia seeds. For a sweeter version, stir in maple syrup, honey, or your favorite sweetener.

    If you do not have mint extract, you can leave it out and make regular chocolate overnight oats instead. You can also add mini chocolate chips, cacao nibs, crushed cookies, or chopped nuts for extra texture. For a stronger chocolate flavor, add a little more cacao powder or use chocolate protein powder.

    You can use whatever chocolate you want. I use semi-sweet but you can use dark chocolate, milk chocolate, or even white chocolate if you prefer that.

    These oats are easy to adjust for different needs. Use gluten-free oats if needed or add protein powder to make them more filling. You can also top them with whipped cream, sliced bananas, fresh berries, or extra chocolate chips before serving.

    To make vegan or dairy-free overnight oats, replace the following ingredients:

    • Greek yogurt - dairy-free Greek yogurt
    • Whole milk - Unsweetened plain or vanilla almond milk
    • Honey - agave
    • Chocolate chips - chopped vegan chocolate

    This recipe is naturally gluten-free, as long as the oats are gluten-free. Some are and some are not. Be sure to read the label carefully.

    Storing leftovers

    Store leftover mint chocolate overnight oats in an airtight container or jar in the refrigerator for up to 5 days. Give them a good stir before serving, and add toppings like chocolate chips, whipped cream, or fruit right before eating so they stay fresh. I do not recommend storing overnight oats in the freezer.
