What you’ll need to make chocolate fudge pie
Equipment
- Pie plate - If you're using a store-bought graham cracker-style pie crust, it will come in a pie pan, and you won't need to supply your own dish. Just use the one the pie crust comes in.
- Whisk - If you're in a pinch, you can use a fork instead of a whisk.
Ingredients
See the printable recipe card at the bottom of the page for all measurements and nutritional information.
- Water
- Cornstarch - This helps the chocolate pie filling to set up with a custard-like consistency.
- Unsweetened chocolate - I do not recommend using milk chocolate or even sweetened dark chocolate. Unsweetened baker's chocolate is the best bet here.
- Sweetened condensed milk - Note that this is different from evaporated milk. You need the sweetened condensed milk or your pie will be bitter.
- Large eggs - These make the pie filling set up as a pudding-like filling. You will use both the egg yolks and egg whites. It's helpful if these are room temperature, but that is not a make or break requirement.
- Butter - This will need to be soft but not melted. It does not matter whether you use salted or unsalted butter. Salted butter contains less than one teaspoon of salt per pound of butter, so the amount of added salt in this recipe is negligible, even if you use salted butter.
- Table salt - Just a pinch to balance out the sweetness.
- Pecan halves - Nuts are optional. They will make your pie a little crunchy which I like, but my kids hate it, so we don't put them in ours. (But I used them pre-kids and will use them again when I'm an empty nester!)
- Chocolate graham cracker pie crust, or pie crust of your choice. Note that if you use a refrigerated (or from scratch) pie crust from dough, you will need to prebake it, and then you will probably need a pie shield to prevent the edges from getting too brown when you bake the chocolate filling.
- Cool Whip or whipped cream - This is optional but makes a nice presentation.
How to make chocolate pudding pie
- Preheat oven to 350 degrees F.
- In a small bowl, stir together water and cornstarch; set aside.
- In a medium saucepan, melt chocolate in sweetened condensed milk over low heat, stirring occasionally.
- Add cornstarch mixture, eggs, butter, and salt; mix until smooth.
- Remove from heat and add pecan halves, if desired (we didn't use them in the photos, but they do add something lovely, and I suggest you try the pie with the pecans at least once); mix well and pour into unbaked pie crust.
- Bake in the preheated oven for 30 to 35 minutes, or until a knife inserted in center comes out clean.
- Allow to cool on a wire rack then cover and chill in the fridge for at least 2 hours before serving.
- Cut into wedges and top with Cool Whip and chocolate shavings, if desired. Serve chilled.
Substitutions & variations
Various different chocolate pies (chocolate chess pie, chocolate chiffon pie, chocolate silk pie, chocolate pudding pie, and others) use different kinds of crusts. Feel free to use a different style of crust, as your taste prefers. You can use a homemade Oreo crust (try the one in this cheesecake recipe), a traditional homemade pie crust made from pastry, a plain graham cracker crust, or a chocolate graham cracker crust, as we have used here.
I love pecans, but my kids do not like them, and so I usually leave them out. If you like pecans, the contrast of the crunchy nuts with the silky pie is very nice. You could also use walnuts, sliced almonds, macadamia nuts, or even peanuts if you wanted to. Or leave them out.
If you have it, a teaspoon of espresso powder or instant coffee will enhance the chocolate flavor without adding a strong coffee flavor.
I suggest topping the chilled pie with Cool Whip and chocolate shavings, but a scoop of vanilla ice cream or fresh fruit is also lovely. You might like sliced strawberries, whole blueberries or raspberries, or even blackberries.
I do not recommend using a different style of chocolate. If you use milk chocolate or even a sweet dark chocolate, your pie may be too sweet.
Storing leftovers
Wrap the pie tightly in plastic wrap and store in the refrigerator for up to 5 days. The crust may get soggy.
You can also freeze a chocolate pie. Wrap it in several layers of plastic wrap (the whole thing or individual slices), then place the wrapped pie into a plastic freezer bag or an airtight container for the freezer. It should stay fresh for 2 to 3 months.
