Sausage Sandwiches with Onions and Mushrooms

Sausage Sandwiches with Onions and Mushrooms

Doesn’t that photo make your mouth water? It does mine. We made our sausage sandwiches healthier than most, but you’ll never notice. Is there a single person in America who is unaffected by heart disease? I can’t imagine that there is. My friend, Sara, lost her mother a few years ago to a heart attack. It was a complete shock; her mom was just in her fifties. I remember the disbelief so clearly. She was so young and so healthy. I was less shocked by my mom’s cancer diagnosis than by Sara’s mom’s heart attack. My experience with heart disease … Read more

Chicken Tetrazzini

Quick & easy chicken tetrazzini casserole recipes - This simple and healthy 15 minute meal is "baked" in the microwave oven using boneless chicken, asparagus, mushrooms, pasta, and a creamy sauce.

Joe made this pasta dish this week, and (after it was prepared), he informed me that I would not like it. He said it was bland and lacked spices. Terrific, Dear! I never had any tetrazzini before, so I didn’t know what to expect. After his proclamation, I considered going out to eat. By myself. At a restaurant with jazz music and dim lights and no children’s menu. Imagine the peace and quiet of a meal alone! Bliss! I didn’t go. I stayed home and took my chances with the tetrazzini. I’m glad I did; it was delicious. The casserole … Read more

Cheesy Shrimp Pasta

Cheesy Shrimp Pasta Bake with Velveeta - This warm and creamy dinner recipe is the perfect comfort food! It's a one pot dish full of noodles and mushrooms. Yum!

I’ve mentioned before that I’m not a huge seafood fan, so when my friend, Jeanne, made Cheesy Shrimp Pasta for a get-together this past weekend, I was not expecting to eat any. Joseph got a plate-full of the shrimp casserole and sat down next to me on the couch. I wasn’t even curious about the meal until everyone in the room began to ooh and aah over it. Even Grace, who said, Can my have some more, Daddy? I asked for a taste of Joe’s, and he gave me two noodles. They were fabulous. I asked for a second taste, … Read more

Start a Tradition – Making Weekly Homemade Pizza

A week or so before the accident, Joe and I decided to make a major change in our finances. Our goals are to build up an emergency fund of at least three month’s salary (how apropos given that we’d need such a fund just a week later!), start putting more money into retirement savings, and spend less each month. Given these new financial priorities, we decided to cut out our restaurant habit. We have been known to go out or order in four times a week – or more – between lunches with friends, breakfasts with Grandma and Pappy, and … Read more

Mushroom Pilaf

I’ve never been a fan of pilaf. Tonight, Joe made a recipe that he’s had forever, and it changed my opinion of pilaf. This was delicious. Joe’s father had a heart attack nearly fifteen years ago. He changed his lifestyle, and he started eating healthier foods. Joe tells me that his dad loved this healthy recipe and they ate it “every other day.” I doubt they really ate it every other day, but one never knows. It is good, so maybe they did.   Print Recipe Mushroom Pilaf Servings Ingredients 2 cups sliced mushrooms you can buy one 16 oz … Read more
