Healthy Baked Falafels Recipe

I love this falafel recipe. We’ve been making them for over ten years. Our kids won’t eat them, but they are great for a date night. We also make them sometimes and nuke some chicken nuggets for the kids. If you make these, you absolutely must make the tzatziki sauce that goes with them. Having them without is like eating plain dry spaghetti noodles. Maybe you like dry spaghetti noodles, but I promise that they’re better with sauce. These are just like that. Homemade Taco Seasoning

homemade taco seasoning

Since my days as a Pampered Chef consultant, I have loved taco seasoning. We eat a lot of tacos, taco dips, enchiladas, chilis, and other foods that use taco dip, so we go through a lot of it. I also have high blood pressure, and that pre-made taco seasoning is insanely high in salt. I’ve been looking for a taco seasoning recipe that tastes as good as my old favorite, and I’ve found one. You know I’m the first person to reach for convenience foods when necessary – pre-made pie crust, whipped cream, and ketchup are high on my list … Read more

Quick and Easy Black Bean Burritos

The best vegetarian black bean burritos recipe - These quick and easy wraps have beens, rice, and corn with Mexican spices and make the perfect dinner or lunch. Wrapped in a tortilla. Could be gluten-free and vegan with a few modifications.

It’s probably obvious, but we love Mexican-inspired meals around here. Our favorites at the moment are grilled burritos, BBQ chicken enchiladas, cheese and onion enchiladas, spicy beans and rice, and breakfast burritos. These quick and easy black bean burritos are quickly gaining favor, too. I like them because they come together in about five seconds (okay, a little more than that, but not much), and Joe likes them because they remind him of one of our favorite food joints, Neato Burrito. It’s a bonus that they don’t heat up the house. Even Grace likes them, as long as we use mild … Read more

Tangy Pan-Fried Home Fries

how to make the best tangy pan fried potatoes - This quick and easy home fries recipe is healthy and low calorie, too! Great for breakfast, brunch, lunch, or dinner, they are crispy because they're pan fried with very little oil. Add onions for a great flavor!

If you open my pantry, you’ll find a few basic staples – olive oil, canola oil, balsamic vinegar, red wine vinegar, white vinegar, cider vinegar, and rice vinegar. We have a favorite brand of each product, and our favorite rice vinegar is Nakano (and has been for more than 10 years). When I was approached to participate in Nakano’s Summer Splash promotion, I jumped at the chance. Little did I know that Nakano maintains a website with dozens of recipes featuring its rice vinegars! I was delighted to find it, and we started making dishes from the website as soon … Read more

Sausage, Bean, and Cheese Nachos

A few months ago, I subscribed to Martha Stewart’s Everyday Food magazine. I rarely pay for magazine subscriptions, but I paid for this one. I thought it would be nice to flip through each month, and I knew in advance that the recipes would use everyday ingredients. I thought my recipe repertoire could use some expanding. You know, beyond the 39 cookbooks in the kitchen that I never open. I found the following recipe  (written by Emeril Lagasse) in the January/February issue. It’s not the most healthy food, but I’ve made some adjustments to improve that. Have a Nacho Picnic … Read more

Cajun Style Beans and Rice

I spent 10 years of my life as a vegetarian. I loved being a vegetarian. Even today, I sometimes feel like an icky traitor for eating meat. I’m aware that I’m weird. Just play along. I feel a special allegiance to meatless cuisine, and we eat meatless meals often around here. On and off over the last 12 years, Joe and I have eaten this beans and rice recipe for supper pretty often. We go in spurts, and we’ll eat it weekly for months and months and then put it away because we’re sick of it, and then get it … Read more
