Carrot Cake Pancakes

To celebrate the official launch of Coffee Filters to Cheese Graters next Monday {squee!}, I’m running content from the book this week. You can buy Coffee Filters to Cheese Graters: Creative Ways to Use Just About Everything next Monday, July 14.  This awesome recipe comes from the section on using cheese graters. You need either a cheese grater or a food processor to get the carrots cut up in small enough pieces to make the pancakes. A quick word of warning about these pancakes. You can’t cook them quickly. You have to cook them slowly over medium-low heat in order for the … Read more

Ham and Rice with Apples – Leftover Ham Recipe

leftover ham recipe

What’s the best thing about any big, family meal? Besides spending time with your nutty family, I mean. Don’t worry. We all have one. The best thing isn’t having a clean house (for five minutes) or having sleepy, worn out children after an afternoon of togetherness. They’re both nice, but not the best thing. It’s leftovers. I eat leftovers almost every single day for lunch; we intentionally make enough food for two meals each time we cook. But then after a really big meal, we’re still eating leftovers two or three days later. I get completely sick of those leftovers. … Read more

Pumpkin Flan

Pumpkin Flan

I like flan a lot. A lot lot. I know I have many favorite desserts, but flan really is one of my favorites. I love the creamy sweet custard and the slightly bitter sugary syrup and the dark brown top. Flan is just amazing, way better than cake or pie. I have cut and roasted two of the twelve large pumpkins we bought a couple of weeks ago. We’ve had roasted pumpkin seeds (twice), pumpkin pie pancakes, a disappointing pumpkin custard, and now an amazing pumpkin flan. As impressive as flan is, you might think it’s hard to make. It … Read more

Pumpkin Pie with Pecan Crumb Topping

Pumpkin pie says Thanksgiving to me. It’s not my favorite pie (that would be pecan), but I’m never able to leave it off of my Thanksgiving menu. This recipe is the best pumpkin pie I’ve ever eaten, due mostly to the thick layer of pecan crumb that I dribble over the pumpkin before baking. It could also have something to do with the whipped topping I dollop on top. This recipe and 11 others appear in Your Best Thanksgiving Ever!, the ebook I published in October. All 12 will grace my table this Thursday.   Print Recipe Pumpkin Pie with … Read more

Irish Potato Candy and Other St. Patrick’s Day Fun

Irish Potato Candy Recipe

I’ve never much cared for St. Patrick’s Day. I think my 3D ultrasound was on St. Patrick’s Day in 2007, and the only reason I remember is that my father-in-law had a green beer when we all went out for dinner afterward. It’s not been a memorable holiday in my life. Until this year. In case you haven’t noticed, we’ve done every holiday with Grace in a big way. It’s just more fun that way. St. Patrick’s Day was no different. This morning, Grace drank green milk with her breakfast. If you put a couple of drops of food color … Read more

Pumpkin Pie with Pecan Topping – Easy Thanksgiving Recipes

Originally posted on October 20, 2008 I love pecan pie, Dear Reader. I mean, I adore it. I wish I could live on pecan pie, but I don’t know if my teeth and hips could stand such a diet. Pumpkin pie, not so much. I like it enough, but I don’t love it. That’s not true. I do love it when it’s mounded with 2 cups of Cool Whip, but then it sort of ceases to be pumpkin pie and is really just pumpkin-y whipped topping, so I don’t think that counts. Anyway, when I started having my family’s Thanksgiving … Read more
