Cheese & Green Chile Oven Omelette

How to make a quick and easy oven omelette recipe with eggs, cheddar and cottage cheese and green chiles. Makes a simple low carb, keto, and paleo breakfast casserole without potatoes or bread. Perfect for busy families for mornings, breakfast, brunch, lunch, or even dinner. Could add bacon, baked ham, or sausage for a little extra oomph, but the vegetarian version is awesome on its own.

I have always eaten a lot of eggs. Starting when I was a little girl, my sister and I would walk to Old Grandma’s house (just down the dirt road a stretch or over the hill and across the field) and eat 2 fried eggs – yolks broken and hard – for breakfast with Grandpa. Later, I ate fried eggs in a restaurant when my dad took my little sister and I for breakfast. Then, when I became a vegetarian in college, I ate a whole lot of eggs as they were a reliable source of protein. When I moved … Read more

Zucchini Sausage Egg Muffins Recipe (Gluten-Free & Low Carb)

How to make low carb gluten-free breakfast muffins with eggs, sausage, and zucchini - This quick, simple, and easy recipe has a ton of keto protein and is great for breakfast, brunch, lunches, or snacks.

One of the things I have consistently eaten since my bariatric surgery in April 2017 is egg muffins. At first, after my surgery, I could only eat one egg muffin and that was it. Now, I usually eat two or three along with some veggies, and it’s a perfect high protein meal for breakfast, lunch, or even a snack. The thing I love most about egg muffins is that they’re quick and easy – both to make and to eat. They make a great on-the-go meal for rushed mornings or packed lunches. This recipe comes from Irena Macri of Instant Pot … Read more

Chocolate Orange Cheesecake

How to make the best homemade chocolate orange cheesecake from scratch - This DIY recipe is simple and easy but does take a bit of time. Top with chocolate ganache to hide any cracks and add a layer of richness and decadence. Original recipe uses graham cracker crumbs for the crust. You can leave out the orange extract for a real, classic New York style cake.

I love cheesecake. Joe would say cheesecake is his favorite dessert. Our favorite cheesecake is served at a diner not far from our home.  It’s amazing. I think we might have a new favorite now. I’ve never before tried to make a cheesecake, and I found the April Daring Bakers Challenge a bit daunting. Jenny from JennyBakes.com proposed that we all make the same cheesecake, but she challenged participants to make their cheesecakes show stoppers. I tried. How’s that fellow to the right? He’s a show stopper, all right. I jest. The cheesecake was a little ugly, but I doctored … Read more

The Best Gluten-Free Pecan Pie Recipe

Before my bariatric surgery, I loved pecan pie. It was my favorite pie ever, and I made a lot of them. And ate them. No holiday went by without a decadent pecan pie. When I went gluten-free, I thought I wouldn’t be able to eat another pecan pie, but then I had a thought. I never loved the crust of the pie anyway, so why not adjust the recipe a bit and make the pie without the crust? I did it, and the pie was a crazy success. As you can see in the photo above, the pie was sturdy enough to … Read more

Healthy Baked Falafels Recipe

I love this falafel recipe. We’ve been making them for over ten years. Our kids won’t eat them, but they are great for a date night. We also make them sometimes and nuke some chicken nuggets for the kids. If you make these, you absolutely must make the tzatziki sauce that goes with them. Having them without is like eating plain dry spaghetti noodles. Maybe you like dry spaghetti noodles, but I promise that they’re better with sauce. These are just like that. The Best Gluten-Free Fudge Brownies Recipe

Gluten-free baking is tricky in my experience. The recipes don’t always taste great, and the texture can be really hard to get right. I don’t have to be 100% gluten-free all the time, but I can’t eat a lot of gluten or I get sick. So I try to make everything gluten-free, but I don’t stress over minute amounts. We’ve made this particular recipe a couple of times, and it came out well every time. I’m pleased to be able to share it with you today. While you’re here, check out my homemade hot fudge recipe. These brownies are … Read more
