- Pizza dough - This needs to be already prepared. The link goes to my personal homemade pizza dough recipe, or you can buy prepared dough at the grocery store. Store-bought dough needs to be raw.
- Pizza sauce - You want this to be thick, if possible. Some grocery stores carry thick pizza sauce and some don't.
- Mozzarella cheese - This is the cheese you will want for that classic pizza flavor, but you can substitute any cheese. I buy a bag of pre-shredded cheese at the grocery store. I know some cooks say that you have to shred your own cheese for it to melt properly, but I've had exactly one bag of pre-shredded cheese fail to melt in 25 years of buying cheese, so I'm going to keep buying it pre-shredded and save myself the work.
- Black olives - I like black olives, but you can use an equal amount of any pizza topping. Make sure it's chopped or sliced into small pieces.
- Fresh basil or parsley - This is for garnish after the muffins are cooked.
- Olive oil or butter for greasing the muffin pan
How to make easy Lunchbox Pizza Muffins recipe
- Preheat oven to 400ºF. Generously grease a standard 12-cup muffin tin with olive oil, including the sides.

- Divide pizza dough into 12 equal pieces. Flatten each piece into a small disc, about 3-4 inches wide.

Substitutions & variations
If you don't want to make pizza dough, you can use a can of refrigerated biscuits. Just use half of a biscuit for each pizza muffin, or make stuffed biscuits by putting half of the biscuit in the bottom, adding the toppings, and adding the other half on top. Seal the edges together with the bottom half, if you can.
