But, to tailor to your preferences, you can add a few bacon slices, pickles, jalapeños, and additional cheese slices such as Monterey Jack, smoked Gouda, or pepper jack. Or add garlic aioli or horseradish aioli!
What you'll need to make Turkey Burgers in the Air Fryer
Equipment
- Air fryer: This can be any style of air fryer. They will all cook similarly, though cooking times vary from appliance to appliance, so a meat thermometer is essential.
- Instant read thermometer: A meat thermometer is a minimal investment that ensures your meat is adequately cooked. Beef burgers can be undercooked without concern for food safety. Chicken and turkey must reach an internal temperature 165ºF to be safely cooked, as that is the temperature at which Salmonella and other pathogens are reliably killed. I personally prefer the Temp Spike wifi thermometer because I can insert the probe and leave it in the meat during cooking. This means that I don't have to open the air fryer in order to check the temperature of the burgers. There may be other wifi thermometer brands; I'm not sure. I got the Temp Spike on sale a year or so ago and never cook meat without it.

- ground turkey - Ground turkey is the star of this recipe. Ground turkey burgers often get dry, and that is a common complaint, but cooking it in the air fryer helps to combat that since the burgers are cooked at a high temperature for a short period of time.
- dried rosemary - I suggest mixing your ground turkey with dried rosemary and garlic powder, and of course, salt and pepper. If you want a different flavor, you could mix your ground turkey with taco seasoning, fajita seasoning, or cajun seasoning instead.

How to make air fryer turkey burgers
- Preheat the air fryer to 400° F.
- In a large mixing bowl, combine all ingredients. Mix well with your hands.
- Divide the meat mixture in half and form each into a patty.
- Place the turkey patties in the air fryer and cook at 375° F for 15-20 minutes, until they reach an internal temperature of 155-160°F (see note below). Every air fryer is different, and some may take up to 25 minutes to cook the burgers completely. Using a meat thermometer is very important in this recipe.
- Add cheese to the burger patties and air fry for 1 more minute. Turn off the air fryer and allow the burgers to rest for 5 minutes.
- The last step is optional but recommended. While the burgers rest, toast the buns. Brush the cut side of the buns with melted butter and place them, cut side up, in the air fryer at 350ºF for 1-2 minutes or until golden brown. You can only toast one or two buns at a time because they need to have room for the air to circulate around them.
Cook's Tips
Using a meat thermometer is very important in this recipe. In order to be safely cooked, turkey must reach an internal temperature of 165ºF, but the temperature will continue to rise during the five-minute resting time after you turn off the air fryer. If you plan to put cheese on the burgers, it is best to do so when the burgers are around 155ºF and then allow it to melt and turn off the air fryer when the burgers reach an internal temperature of 160ºF. The temperature will reach 165ºF while they sit.
I use a Temp Spike wifi thermometer that allows me to keep the probe inside the burgers with the air fryer door closed, so I can clearly see the internal temperature without disrupting cooking by opening the air fryer.
Substitutions & Variations
If you don't have or like rosemary, you can substitute dried thyme in this recipe.
You can play with the flavors of these burgers by changing the spices. Taco seasoning can be delicious, as well as herbs like sage, paprika, chili powder, or oregano. I've also tried Cajun seasoning, fajita seasoning, and BBQ seasoning with great results.
Sharp cheddar is my favorite cheese, so I use it on these burgers. But any cheese, including Swiss, Gouda, pepper jack, Monterey jack, and Colby Jack, will all work. You can't go wrong with any of them. Sometimes, I use a slice of sharp cheddar on top of a slice of pepper jack. It's a great flavor.
You can use any kind of bun or lettuce wrap, or serve the turkey burgers on a plate with a knife and fork. I suggest brioche rolls because they're sturdy and taste good, but you could also use a sesame seed roll, a whole-grain roll, a potato roll, or a sweet Hawaiian roll. The sweet Hawaiian would be delicious with sweet chili sauce, as suggested.
Serve with your favorite toppings on a bun or in a lettuce wrap. My suggested toppings are mayonnaise, sweet chili sauce, tomato, lettuce, and onion. The burgers would also be great with sliced avocado, mushrooms, and roasted red peppers.
Storing leftovers
To Store: Store leftover burgers in an airtight container for up to 3 days in the refrigerator.
To Reheat: Rewarm gently in the microwave or an air fryer until it's warmed through.
To Freeze: You can freeze these patties either before or after cooking. Either way, you'll want to pack them in between double layers of parchment paper in a freezer-safe container to avoid freezer burn. They will keep in the freezer for up to 4 months.
