Last year, I created {cough, cough} a peppermint hot chocolate recipe using Peppermint Mocha creamer from International Delight. Grace and I have been looking forward to this year’s Peppermint Mocha season with glee. A few weeks ago, I realized that creamer can be used in place of cream in recipes. I like flan a lot. A lot lot. I know I have many favorite desserts, but flan really is one of my favorites. I love the creamy sweet custard and the slightly bitter sugary syrup and the dark brown top. Flan is just amazing, way better than cake or pie. Breakfast for dinner is comfort food, don’t you think? I do. This particular recipe includes fruit, making it a wee bit healthier than plain old pancakes. That might be wishful thinking. I like to serve these pancakes with an omelet or sausage patties and a dish of fried apples. They are delicious, and pairing them with protein and cooked apples makes a perfect dinner. Is your mouth watering? It should be. I turned a plain old cake mix and a few humble add-ins into a moist and decadent chocolate masterpiece for my dad’s birthday.
