    Healthy Potato Chips Recipe

    Grace is not eating much these days.

    When I say not eating much, what I really mean is that the only three healthy food items she'll consent to eat are bananas, eggs, and cantaloupe.

    I'm assuming that this is a phase and she'll soon go back to eating a wider variety of foods.

    The recipe that follows is one of my ploys to get nutrients into Grace's belly without her knowing it. It works better that way.

    Healthy Potato Chips Recipe

    Ingredients
      

    • 1-2 sweet potatoes cleaned and skinned, if desired (I don't desire. We eat the potato skins at my house.)
    • 1 tablespoons olive oil or a few spritzes of non-stick spray
    • Salt or cinnamon sugar or pumpkin pie spice to taste

    Instructions
     

    • Preheat your oven to 350.
    • Cut the sweet potatoes into very thin slices, and arrange them on a cookie sheet in a single layer.
    • Drizzle with olive oil or spritz with non-stick spray.
    • Sprinkle with salt or cinnamon sugar or pumpkin pie spice.
    • Bake for 10 minutes, then flip and bake another minute or two until they are a light golden brown and slightly crispy.
    • Serve warm or cold.

      Great idea! We are having the same phase here, Ryder will only willingly eat a limited amount of things. In his case it is ham or turkey, bananas, cheese, mango, and peas. I am going to try the Orange Chippies, I think they will be a huge hit!
      For a few days I was missing your posts, it wasn't showing up on my Dashboard that you were updating! So I came over and found you are doing some renovations. I just added your new URL on my Dashboards and your updates are showing up now. I am so glad, I really enjoy your posts!=)

      So glad your blog is back to normal 😉 I absolutely LOVE sweet potato fries. I slice them super thin and sprinkle them with coarse salt. I've never tried making them into chips, though! Afraid they'd fall apart.

      I'm taking care of my 14 month old granson while his mommy does the college and work. If he doesn't like the food he tries to throw it like the food is a baseball. Swear I want to install a shower curtain around him or feed him in the tub! He only dislikes peas & potatoes though...Blessings Diana
