One Pan Sausage and Veggies

Ingredients
- 1¼ pounds sweet Italian sausage turkey or pork, cut into one inch pieces
- 2 medium onions cut in one inch chunks
- 3 small Yukon Gold potatoes cut in one inch chunks
- 3 medium zucchini or yellow squash or a mix, cut in coins or half rounds
- ¾ cup balsamic vinegar divided
- ¼ cup olive oil extra virgin
Instructions
- Preheat oven to 425ºF.
- In a 9x13 pan, combine sausage with veggies. Pour vinegar and olive oil over the mixture and toss to coat.
- Roast in oven until sausages are completely browned, onions nicely caramelized, and liquid is almost completely evaporated, about 45 minutes. Stir occasionally, and add water in ¼ cupfuls if the pan seems to be drying out.
- Remove pan from oven, add remaining ¼ cup of balsamic vinegar with ¼ cup water. Let stand for three minutes, then stir the pan, scraping up the brown bits and sauce. Serve hot.

I love this. My hubby will go crazy for this. He loves anything with sausage, bell pepper, and onion. There you go. So, you can imagine what pizza we order. This will be a favorite for him. I think it would be good with pasta, as well, if you left the potatoes out. Thanks for sharing and joining in the fun.
