We have been doing a lot of baking this holiday season, both gluten-free and regular. Our most recent creation was this coconut macaroon recipe which is delightfully gluten-free, a surprise to me. I thought coconut macaroons usually had flour in them, but when Allie and I made these coconut macaroons last week, there was no flour in them whatsoever. Nut-Crusted Chicken Fingers (Gluten-Free)

Eating gluten-free is not as hard as I expected it would be. We’ve been eating normally for the most part since I went gluten-free. We have cut out most of our pasta and bread, having gluten-free pasta only twice (it wasn’t that good) and no gluten-free bread. We’ve modified some recipes and used our gluten-free flour blends quite a bit. I like flan a lot. A lot lot. I know I have many favorite desserts, but flan really is one of my favorites. I love the creamy sweet custard and the slightly bitter sugary syrup and the dark brown top. Flan is just amazing, way better than cake or pie.
