    Baked Oatmeal Pudding

    Grace and I love oatmeal for breakfast.

    We eat it almost every weekday morning.

    Baked Oatmeal Pudding

    Ingredients
      

    • 1 cups fat-free milk
    • 2 eggs
    • 2 tablespoons light olive oil
    • ½ cups packed brown sugar
    • 1 teaspoon ground cinnamon
    • 1 ½ cups old-fashioned rolled oats
    • 1 ¼ teaspoons baking powder
    • ¼ teaspoon salt
    • ¼ cups chopped nuts pecans are our favorite
    • ¼ cups dried cherries cranberries, or strawberries
    • 1 firm ripe apple or pear chopped
    • ½ cups blueberries fresh or frozen

    Instructions
     

    • Preheat oven to 325. Coat an 8" square baking dish with cooking spray.
    • In a large bowl, whisk together the milk, eggs, oil, sugar, and cinnamon. Stir in the oats, baking powder, salt, nuts, dried fruit, and apple or pear. Stir just until well blended.
    • Pour into the prepared pan. Bake for 25 minutes, or until liquid is absorbed and the top is light golden brown. Spoon into bowls and top with blueberries.

    I topped this with light whipped topping, too, but that's just me.

      I am the only one in my family that doesn't like oatmeal, even though I know I should. I'm thinking that if I tried it this way, I might actually be able to eat it!

      Oh, my gosh! A guy I worked with when I lived in NYC used to make this when we'd have brunch at work. I never thought to ask him for the recipe. I LOVE this stuff! Thanks for posting this. I will probably make some tomorrow!

      I enjoy the solitude of cooking. It is like a science experiment. I'm in my lab mixing ingredients together. And making tasty food, hopefully.
      Oat meal, my mother's style, was always lumpy. She could burn water. I only discovered my excitement for oatmeal when I had a bowl in a little bed & breakfast place in Ireland twenty five years ago. Ever since then I relish oatmeal. But this recipe for "Baked Oatmeal" is a delectable departure from all of the others. I like the idea of the whipped cream on top. I plan on putting the concept of "Baked Oatmeal" in my next novel. After all, the location will be the British Isles.
      I suggest that you make breakfast exciting. Do a baked oatmeal. It's like a dessert.
