    Healthy Baked Oatmeal

    This healthy baked oatmeal is quick, cozy, and easy to prep ahead for busy mornings. It’s one of the best easy baked oatmeal recipes made with old fashioned oats, no banana, and mix-ins like apple, cherry, and blueberry for a perfect baked blueberry oatmeal.

    Equipment

    • 8x8 inch baking pan

    Ingredients
      

    • 1 cup whole milk or low fat or non-dairy milk
    • 2 eggs
    • 2 tablespoons olive oil
    • ½ cup packed brown sugar
    • 1 teaspoon ground cinnamon
    • 1½ cups old-fashioned rolled oats
    • 1¼ teaspoons baking powder
    • ¼ teaspoon salt
    • ¼ cup chopped nuts pecans are our favorite
    • ¼ cup dried cherries or substitute cranberries or strawberries
    • 1 large apple or pear, chopped
    • ½ cup blueberries fresh or frozen

    Instructions
     

    • Preheat oven to 325ºF. Coat an 8" square baking dish with cooking spray.
    • In a large bowl, whisk together the milk, eggs, oil, sugar, and cinnamon. Stir in the oats, baking powder, salt, nuts, dried fruit, blueberries, and apple. Stir just until well blended
    • Pour into the prepared pan. Bake for 25 minutes, or until liquid is absorbed and the top is light golden brown. Spoon into bowls and top with more fruit.

      I enjoy the solitude of cooking. It is like a science experiment. I'm in my lab mixing ingredients together. And making tasty food, hopefully.
      Oat meal, my mother's style, was always lumpy. She could burn water. I only discovered my excitement for oatmeal when I had a bowl in a little bed & breakfast place in Ireland twenty five years ago. Ever since then I relish oatmeal. But this recipe for "Baked Oatmeal" is a delectable departure from all of the others. I like the idea of the whipped cream on top. I plan on putting the concept of "Baked Oatmeal" in my next novel. After all, the location will be the British Isles.
      I suggest that you make breakfast exciting. Do a baked oatmeal. It's like a dessert.
