These sauteed green beans are cooked with sweet caramelized onions, plenty of garlic, and fresh dill for a savory, flavorful side dish. It comes together in one skillet and is easy enough for a weeknight but special enough for the Thanksgiving, Christmas, and Easter holidays.
Heat oil and sugar together in a large cast-iron skillet over medium-low heat. Add onions and sauté until tender and golden brown, stirring often, about 30 minutes. Add the garlic and cook until fragrant, about 1 extra minute.
Turn heat up to medium-high. When pan is hot, add the green beans and continue cooking until the beans are crisp-tender, stirring frequently, about 5 minutes.
Remove from heat and stir in dill, salt, and pepper.
Serve immediately.
Notes
A note about fresh herbs: Stirring the fresh dill in after cooking preserves its flavor. Heating decreases the flavor of most fresh herbs, especially dill and cilantro. (There is no cilantro in this recipe; I am just giving you information for future cooking.)Store leftover beans in an airtight container in the fridge for up to 4-5 days. Reheat in a skillet to preserve the crisp texture. If you reheat them in the microwave, they will get soft.
