This crockpot cream cheese chicken chili simmers chicken, black beans, corn, and diced tomatoes in a ranch seasoned broth until it's ready for a block of cream cheese to melt in and make it irresistibly creamy. The slow cooker does all the work, so all you have to do is stir and ladle it into bowls for a thick, stew like dinner the whole family will ask for again.
Add the chicken to the Crockpot. Pour the tomatoes, beans, and corn on top. Sprinkle ranch seasoning mix, garlic powder, and other seasonings over top.
Pour in the chicken broth.
Cut the cream cheese into cubes or large chunks, and drop into the crock pot mixture.
Cook on low for 6-8 hours or high for 3-4 hours.
Once cooking is completed, shred the chicken and stir everything together thoroughly.
If the chili is too thin, stir together a tablespoon of corn starch and a tablespoon of water, add to the pot and cook for an additional 15-20 minutes on high.
Garnish with shredded cheddar cheese, cilantro, or your favorite toppings. Serve with tortilla chips or over rice, if desired.
