Ingredients
  

  • 1½ pounds beef tips
  • 1 large onion chopped
  • 1 cup corn kernels
  • 1 can black beans 15 oz
  • 1 can diced green chili peppers 4 oz
  • 20 oz salsa
  • ½ cup low sodium fat-free beef broth
  • cheddar cheese Shredded
  • rice prepared according to package instructions

Instructions
 

  • Place beef in slow cooker.
  • Combine onion, corn, beans, chiles, salsa, and broth. Pour over beef in slow cooker.
  • Cover. Cook on low for 8 hours.
  • Serve over rice or cauliflower rice and topped with cheddar cheese.
