Instructions
Mix strawberries, sugar, lemon juice and rum extract in a small saucepan and stir over medium heat until sugar is dissolved. Bring the mixture to a simmer.
Lower the heat and simmer for ten minutes, then remove from the heat.
Allow the strawberry topping to cool before serving. Syrup will be thick.
If desired, you may strain or puree with an immersion blender for a smoother syrup.
