Mushroom Pilaf

  • 2 cups sliced mushrooms you can buy one 16 oz container of these pre-sliced if you're short on time
  • 1 medium onion chopped
  • 2 cloves garlic
  • 2 tablespoons chopped parsley
  • 1 teaspoon basil
  • pinch of pepper
  • 2 tablespoons butter
  • ¾ cup uncooked rice - use your favorite type of rice
  • 1 ½ cups water
  • cup toasted almonds chopped


  • Saute mushrooms, onion, garlic, parsley, basil, and pepper in butter about five minutes, or until tender, stirring frequently.
  • Stir in rice and water. Bring to a boil over high heat.
  • Cover; reduce heat and simmer until liquid is absorbed and rice is tender, about 25 minutes. Stir in almonds.
  • Serve
