Zucchini Noodles with Garlic, Lemon, & Parmesan
pressed with a garlic press
zest and juice only
spiralized with a spiralizer
grated, not the powdery stuff in the can but the slivers of actual cheese
Heat a medium skillet over medium heat. Add olive oil. When the oil is beginning to steam, add garlic, lemon zest, and salt and stir for 30 seconds until golden brown.
Add zucchini noodles and drizzle with with lemon juice and stir into the garlic mixture. Sauté 3-4 minutes, until zucchini is just beginning to soften.
To serve, sprinkle with Parmesan cheese.
