Zucchini Noodles with Garlic, Lemon, & Parmesan

  • 2 tablespoons olive oil
  • 2 cloves garlic pressed with a garlic press
  • 1/2 medium lemon zest and juice only
  • 1/2 teaspoon kosher salt
  • 2 large zucchini spiralized with a spiralizer
  • 4 tablespoons Parmesan cheese grated, not the powdery stuff in the can but the slivers of actual cheese
  • Cracked pepper


  • Heat a medium skillet over medium heat. Add olive oil. When the oil is beginning to steam, add garlic, lemon zest, and salt and stir for 30 seconds until golden brown.
  • Add zucchini noodles and drizzle with with lemon juice and stir into the garlic mixture. Sauté 3-4 minutes, until zucchini is just beginning to soften.
  • To serve, sprinkle with Parmesan cheese.
