Zucchini Noodles with Garlic, Lemon, & Parmesan

This simple and easy zoodles instructions will show you how to make the zucchini noodles as well as how to cook them so that they stay al dente and don't get mushy. The recipe is for garlic, lemon, and Parmesan zoodles with a light sauce and a sprinkle of cheese.

  • 2 tablespoons olive oil
  • 2 cloves garlic pressed with a garlic press
  • ½ medium lemon zest and juice only
  • ½ teaspoon kosher salt
  • 2 large zucchini spiralized with a spiralizer
  • 4 tablespoons Parmesan cheese grated, not the powdery stuff in the can but the slivers of actual cheese
  • Cracked pepper


  • Heat a medium skillet over medium heat. Add olive oil. When the oil is beginning to steam, add garlic, lemon zest, and salt and stir for 30 seconds until golden brown.
  • Add zucchini noodles and drizzle with with lemon juice and stir into the garlic mixture. Sauté 3-4 minutes, until zucchini is just beginning to soften.
  • To serve, sprinkle with Parmesan cheese.
