Instructions
Heat a medium skillet over medium heat. Add olive oil. When the oil is beginning to steam, add garlic, lemon zest, salt, and pepper and stir for 30 seconds until golden brown.
Add zucchini noodles and drizzle with with lemon juice and stir into the garlic mixture. Sauté 3-4 minutes, until zucchini is just beginning to soften.
