Make Ahead Mexican Breakfast Burritos for Meal Prep
Quick & healthy breakfast burritos are packed with eggs, ham, and green chili for a homemade taste of New Mexico wrapped in warm tortillas. These Mexican breakfast burritos are simple, filling, and make ahead friendly so they freeze and reheat with ease. These are meal prep breakfast burritos that are authentic, healthy, and freezable for the best grab-and-go breakfast ideas.
Heat olive oil in a medium skillet over medium heat. Sauté onion, ham, garlic, and green chiles until onion is soft and translucent.
Whisk the eggs with the spices. Add this mixture to the skillet. As the eggs begin to set, use the spatula to scramble them. Continue to cook until the eggs are solid and beginning to brown.
Place one tortilla on a microwave-safe plate. Cover with a damp paper towel and microwave for 20 seconds. (This makes the tortilla pliable.)
Spoon about ¾ of a cup of the egg mixture into the center of the warm tortilla.
Heat salsa in the microwave for 30 seconds. Spread about two tablespoons of salsa on top of the eggs.
Sprinkle with ¼ cup of Mexican blend shredded cheese and a sprinkle of chopped avocado.
Wrap up the burrito. Everything is already hot, so there's no need to cook them, but if you want to grill them in a panini press to toast the tortilla, you can do that.
Repeat for the remaining burritos.
