These delightful mushrooms are the perfect quick and easy side dish for weeknight meals, but they're special enough for holidays. Ready in 15 minutes, simply toss the fresh mushrooms in a homemade savory sauce with Parmesan cheese, garlic powder, and dried thyme, and air fry.
Clean the mushrooms using a damp paper towel to remove loose dirt. If they're not already sliced, slice them into ¼-inch slices, being careful to keep the slices uniform to ensure even cooking. Transfer the sliced mushrooms to a large bowl.
Whisk the avocado oil, soy sauce, Parmesan cheese, garlic powder, dried thyme, and black pepper in a small bowl, then pour over the sliced mushrooms. Toss gently until all the mushrooms are evenly coated.
Transfer the mushrooms to the basket of the air fryer in more or less a single layer. They can overlap a little, as they shrink a lot during cooking. You may need to air fry the mushrooms in batches, depending on the size of your air fryer.
Air fry for 8 to 10 minutes, gently tossing the mushrooms after 4-5 minutes. If the mushrooms stick to the air fryer basket, gently loosen them with a spatula and spread them out again in a single layer.
The mushrooms can be removed from the air fryer when they turn golden brown and have some crispy edges. Sprinkle them with fresh thyme leaves and additional Parmesan cheese before serving. Serve hot.
