This crockpot whole chicken cooks low and slow with simple seasonings until the meat is tender, juicy, and falling off the bone. It is a hands off dinner that leaves you with plenty of leftover chicken for sandwiches, soups, and salads all week long.
Remove the giblets (the internal organs of the chicken, usually stored in a little pouch), rinse the chicken, and pat the chicken dry with paper towels. Place the chicken directly into the slow cooker. Do not add any liquid.
Cook on LOW for 6–7 hours or HIGH for 4–5 hours, until the thickest part of the breast is 165ºF and tender.
Optional: transfer to a hot oven and cook at 425ºF for 15–20 minutes to crisp and brown up the skin.

Store in an airtight container in the refrigerator for up to 4 days and the freezer for up to 2 months. Thaw overnight in the fridge before reheating.
