Instructions
Stir together the flour, baking powder, salt, garlic, onion, and paprika in a large bowl. Stir in the milk to form a batter. See tips above if the batter is too thin.
Fold in the cheddar cheese, green onions, and corn until well mixed. Let batter rest for 5-10 minutes so that the flour can absorb the moisture.
Heat a large cast-iron skillet over medium heat, adding butter if needed, until hot.
Add ⅓ cup of the batter to your pan for each fritter and cook for 1-2 minutes on each side, or until both sides are golden and the inside is fully cooked. Continue cooking the corn fritters in batches until all the batter is cooked.
Enjoy hot with sour cream, green onions, or salsa.
Notes
Store leftovers in an airtight container in the fridge for 2-3 days. Air fry at 390℉ for 3-5 minutes to reheat.
