Make perfectly round fluffy pancakes with this easy air fryer pancake recipe. They cook in just 8 minutes and are simple to prepare with pantry staples.
To make buttermilk, combine milk, white vinegar, and vanilla bean paste. Stir and set aside for 5 minutes to thicken.
Sift the flour, sugar, baking powder, and salt together into a large mixing bowl.
Pour the buttermilk mixture into the dry ingredients and whisk until smooth. Allow to rest on the counter for 30 minutes.
Grease a 9-inch round cake tin with melted butter. Pour about ¼ of the batter into the tin. This will make 1 large pancake.
Air fry for 8 minutes at 350°F (180°C) or until lightly golden and cooked through the middle. Remove the pancake from the pan and set it aside. Grease the tin again and repeat until all the batter is used.
Serve with berries and maple syrup or toppings of your choice
