  • ¾ cups butter softened
  • ¼ cups shortening
  • cups sugar
  • 2 tablespoons brown sugar
  • 2 large eggs
  • teaspoons vanilla bean paste
  • cups flour
  • 1 box instant vanilla pudding
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt

  • Preheat oven to 350ºF.
  • Line the baking sheet with parchment paper.
  • Cream together butter, shortening, and sugars with an electric or stand mixer, until the mixture is a light and fluffy paste.
  • Add in eggs and vanilla bean paste. Continue mixing until these are thoroughly incorporated.
  • In a separate bowl, whisk together the flour, instant pudding mix, baking soda, baking powder, and salt.
  • Add the flour mixture to the butter mixture a little at a time, mixing between additions until all the flour is incorporated.
  • Using a 1-tablespoon scoop, drop cookies onto the prepared baking sheet about 2 inches apart.
  • Bake for 12-15 minutes or until set and lightly golden brown around the edges.
  • Remove cookies from the oven and allow to cool on the baking sheet for 5 minutes before removing to a wire rack to cool completely.
