Perfect Soft Sugar Cookies for Christmas

¾ cups butter softened ¼ cups shortening 1½ cups sugar 2 tablespoons brown sugar 2 large eggs 1½ teaspoons vanilla bean paste 2½ cups flour 1 box instant vanilla pudding 1 teaspoon baking soda ½ teaspoon baking powder ½ teaspoon salt
Preheat oven to 350ºF.
Line the baking sheet with parchment paper.
Cream together butter, shortening, and sugars with an electric or stand mixer, until the mixture is a light and fluffy paste.
Add in eggs and vanilla bean paste. Continue mixing until these are thoroughly incorporated.
In a separate bowl, whisk together the flour, instant pudding mix, baking soda, baking powder, and salt.
Add the flour mixture to the butter mixture a little at a time, mixing between additions until all the flour is incorporated.
Using a 1-tablespoon scoop, drop cookies onto the prepared baking sheet about 2 inches apart.
Bake for 12-15 minutes or until set and lightly golden brown around the edges.
Remove cookies from the oven and allow to cool on the baking sheet for 5 minutes before removing to a wire rack to cool completely.
