  • Preheat the oven to 350ºF.
  • Crack the eggs into a large mixing bowl and beat them. Then add all the other ingredients except for ⅓ cup of pizza sauce (that is reserved for putting on top of the meatloaf).
  • Using your hands, combine all the ingredients together until the egg, spices, vegetables and breadcrumbs are well blended with the meat. If the mixture feels dry, add ¼ cup of water and mix that in.
  • Transfer the meat mixture to a loaf pan or form it into a loaf on a baking sheet. Pour the reserved pizza sauce over the top of the meatloaf.
  • Bake in the pre-heated oven for one hour, or until it reaches an internal temperature of 155ºF.
  • Remove from the oven and let it rest for 15 minutes before slicing.
  • Serve with a drizzle of additional warmed pizza sauce and a sprinkle of quartered pepperoni and shredded mozzarella cheese over the top of each slice.
