  • 1 tablespoon olive oil
  • 1 onion chopped
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 3 cloves garlic pressed
  • 1 tablespoon chili powder
  • ½ teaspoon ground cumin
  • ½ teaspoon dried oregano
  • 1 teaspoon sweet paprika
  • 14 ounces pinto beans drained and rinsed
  • 15 ounces whole kernel corn drained
  • 3 cups white rice cooked
  • 4 ounces Cheddar cheese shredded
  • 8 tablespoons Greek yogurt
  • ¼ cup Cilantro chopped

  • Heat oil in a large skillet over medium high heat. Add onion, salt, and pepper. Sauté, stirring often until onion is soft, 3-4 minutes. Stir in garlic and cook until fragrant, about 30 seconds. Add seasonings.
  • Mix in beans and rice. Continue to cook and stir until heated through, about 5 minutes. Add water if it looks as if the spices or rice are sticking and burning.
  • Serve with a sprinkle of cilantro, ½ ounce shredded cheddar and 2 tablespoons of Greek yogurt.

You may choose to add some chopped up or shredded, cooked chicken, pork, or beef to this recipe. That would increase the protein and make it a heartier meal.
