Healthy Hash Brown Casserole

If you love the cheesy goodness of hash brown casserole, you're really going to love this lower fat and lower calorie version. It is just as creamy and delicious in a significantly healthier form!

  • Preheat oven to 350ºF.
  • Combine first 7 ingredients in a large bowl, and mix well. Add potatoes and stir to coat thoroughly.
  • Spoon mixture into a 9 x 13-inch baking dish coated with cooking spray.
  • Sprinkle paprika evenly over casserole.
  • Bake at 350ºF for 1 hour or until bubbly.

Notes

If you don't like Greek yogurt, you can substitute fat free sour cream in its place. Just know that sour cream has more carbs and more calories than Greek yogurt. I can't tell the difference between them, and it doesn't really matter which one you use in the recipe. It will taste good either way.
