  • 1 tablespoon olive oil
  • 1 large onion chopped
  • 2 garlic cloves
  • ¼ cup low fat shredded cheddar cheese
  • ¼ cup bread crumbs
  • 1 ½ teaspoon Italian seasoning
  • 1 teaspoon ketchup
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • 1 egg beaten
  • ½ pound ground turkey
  • ½ pound ground beef
  • ½ cup ketchup
  • 1 tablespoon brown sugar
  • 1 teaspoon mustard

  • Preheat oven to 350.
  • Heat oil in a medium skillet over medium heat. When hot, add onion and garlic. Saute until translucent and beginning to brown. Remove from heat.
  • Combine onions with cheese, bread crumbs, Italian seasoning, ketchup, salt, pepper, and beaten egg in a large bowl. Toss together until well blended.
  • Mix ground meat together. Crumble over breadcrumb mixture. Mush together with your hands until it's evenly mixed.
  • Spritz an 8"x4" loaf pan with cooking spray (or grease it with butter, but that would be not so healthy). Pack meat into loaf pan.
  • Bake at 350 for 35 minutes.
  • While meat loaf bakes, combine ½ cup ketchup, brown sugar, and mustard. After the first 35 minutes, spread ketchup mixture over the meat loaf and bake an additional 5 minutes.
