Cucumber Pasta Salad

Whether you're feeding a crowd or just overflowing with cucumbers, this easy pasta salad is the perfect dish to bring to a spring or summer BBQ or cookout. Cut the sugar in half to make it a healthy option.

  • 8 ounces tube pasta like penne
  • 1 tablespoon olive oil
  • 2 medium cucumbers sliced thin (peeled or not, as you prefer)
  • 1 medium onion sliced thin
  • 1 cup sugar use half Splenda for a healthier dish
  • 1 cup water
  • 3/4 cup white vinegar
  • 1 tablespoon mustard
  • 1 tablespoon dried parsley
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1-2 cloves garlic pressed


  • Prepare pasta according to package directions. Drain and rinse in cold water.
  • Peel stripes on your cucumbers. Slice into thin slices. Peel and slice the onion into very thin slices.
  • Mix cucumbers, onions, pasta, and oil until thoroughly coated.
  • Combine remaining ingredients and mix well. Pour over salad. Toss to coat.
  • Cover and chill 3-4 hours to overnight, stirring occasionally.
