Copycat Taco Bell Mexican Pizza

How to make the best homemade copycat Taco Bell Mexican pizza - This quick and easy recipe is a healthy DIY version of the double decker tortilla pie you love. Baked in the oven with ground beef and tortillas, but can be made with chicken or vegetarian with simple modifications. 


  • 1 tablespoon olive oil
  • 8 tortillas burrito size
  • 1 pound ground beef
  • 1 small onion diced
  • 2 cloves garlic pressed or minced
  • 2 tablespoons taco seasoning
  • 1 can refried beans fat free
  • 2 cups salsa divided
  • 2 cups Cheddar or Mexican blend cheese shredded
  • 1 can Black olives sliced
  • diced tomatoes
  • green onion
  • cilantro


  • Preheat oven to 350.
  • Brush each tortilla on both sides with a small amount of olive oil. Toast for 5 minutes.
  • Brown ground beef, garlic, and onion over medium heat. Stir and cook for a few minutes, until the onions are soft and the meat is no longer pink. Sprinkle taco seasoning over the meat and stir to coat.
  • In a medium bowl, mix a can of refried beans with 1 cup of salsa. Spread bean mixture on top of 4 of the tortillas. Sprinkle beef and onions over the beans.
  • Add second tortilla on top of each pizza. Spread this with remaining salsa and top with shredded cheese.
  • Bake the pizzas for 10 minutes, until the cheese is melty.
  • Top with diced tomatoes, sliced black olives, and chopped cilantro. Slice and serve hot.


You can substitute 2 cups of shredded chicken or 2 cans of black beans for the ground beef.
