Easy Ice Cream Cake

It's easy to make a fancy ice cream cake, just like the stores do!

  • Ice cream your choice of flavors, slightly softened in the refrigerator
  • Chocolate ganache Use the link above
  • Springform pan wrapped in plastic wrap or aluminum foil
  • Spatula


  • Smooth the first flavor of ice cream into the springform pan, and then freeze the pan. Sprinkle chocolate cookies or chips over the ice cream.
  • Repeat with the next flavor. Spread a very, very thin layer of chocolate ganache over the ice cream, and then freeze the pan.
  • Continue to repeat, adding additional cookies, chocolate chips, and/or ganache as it suits you.
  • When the whole thing is frozen solid, remove the sides of the pan and serve. It's easier to cut if you let it sit out for 15-20 minutes before serving.
