Servings 5 cups

  • 1/2 cup vegetable oil
  • 1/4 cup flour
  • 3 tablespoons chili powder this is a lot and will make the enchilada sauce spicy. If you prefer a more mild flavor, cut back on this.
  • 16 oz tomato sauce
  • 2 cups chicken broth or water
  • 1 teaspoon cumin
  • 3-4 cloves garlic freshly pressed
  • 1 teaspoon onion powder
  • salt to taste

  • Heat the oil in a saucepan over medium-high heat.
  • Reduce heat to medium and stir in the flour and chili powder. Cook until lightly browned, stirring constantly to prevent burning.
  • Gradually add the rest of the ingredients, continuing to stir to prevent the sauce from sticking and burning.
  • Cook for approximately 10 minutes, stirring frequently, or until sauce begins to thicken.

This sauce was perfect for us, but a wee bit too spicy for our kids when they were young. Now that they're tweens, they love it. If your family doesn't like spicy foods, you may want to decrease the chili powder and/or garlic.
