Garlic Parmesan Roasted Carrots

Parmesan roasted carrots are crispy and sweet, and the addition of the crunchy Parmesan cheese sends them over the edge to amazing. Your family will devour these carrots at holiday meals and everyday dinners. Always double the recipe if you want leftovers because these carrots disappear quickly.

  • 12 ounces Carrots peeled and sliced into thin planks
  • 2 tablespoons butter melted
  • 2 cloves garlic pressed
  • 1 teaspoon rosemary optional
  • 3 tablespoons Parmesan cheese grated (NOT the powdery stuff that comes in a can, but real cheese cut into tiny slivers)
  • 1 teaspoon parsley chopped, optional


  • Preheat oven to 400.
  • Mix melted butter, garlic, and rosemary together. Toss carrots in this mixture to coat them.
  • Place carrots on a baking sheet. Roast for 15 minutes, then sprinkle the carrots with Parmesan cheese. Roast for another 10 minutes or until the cheese is melted and slightly browned.
  • Remove from oven and top with parsley.
