Healthy Shrimp and Asparagus Stir Fry with Lemon Sauce
This easy shrimp & asparagus stir fry is a quick and healthy recipe with simple homemade stir fry sauce with lemon, garlic, and ginger, juicy shrimp, and fresh asparagus in one delicious dish that everyone will love.
1tablespoonsoy sauceWe use La Choy because it's gluten-free.
1clovegarlicpressed with a garlic press
1mediumlemonJuice of entire lemon and 1 tsp zest
1tablespoonsugarYou can use Splenda or Stevia for a lower carb version.
In a small bowl, whisk together all sauce ingredients.
In a large skillet or wok, heat 2 tablespoons olive oil over medium-high heat. Add shrimp to the pan and cook 3 minutes on each side. Season shrimp with 1/4 teaspoon salt. At this point, it should be opaque, but slightly undercooked. Remove from pan.
In the same skillet, heat another 2 tablespoons of olive oil over medium-high heat. Add asparagus and cook until tender. Season with 1/4 teaspoon salt. Add ginger and garlic and stir to combine. Sauté another 30 seconds.
Add shrimp and lemon sauce into pan. Simmer for 5-6 minutes or until sauce is thickened.
