For the shrimp

  • 4 tablespoons olive oil divided
  • 1 pound shrimp large or jumbo size
  • 1 pound asparagus cut into 2-inch sticks
  • 1/2 teaspoon salt divided

For the lemon sauce

  • 2/3 cup chicken broth
  • 1 tablespoon soy sauce We use La Choy because it's gluten-free.
  • 1 clove garlic pressed with a garlic press
  • 1 teaspoon fresh ginger minced
  • 1 tablespoon cornstarch
  • 1 medium lemon Juice of entire lemon and 1 tsp zest
  • 1 tablespoon sugar You can use Splenda or Stevia for a lower carb version.

  • In a small bowl, whisk together all sauce ingredients.
  • In a large skillet or wok, heat 2 tablespoons olive oil over medium-high heat. Add shrimp to the pan and cook 3 minutes on each side. Season shrimp with 1/4 teaspoon salt. At this point, it should be opaque, but slightly undercooked. Remove from pan.
  • In the same skillet, heat another 2 tablespoons of olive oil over medium-high heat. Add asparagus and cook until tender. Season with 1/4 teaspoon salt. Add ginger and garlic and stir to combine. Sauté another 30 seconds.
  • Add shrimp and lemon sauce into pan. Simmer for 5-6 minutes or until sauce is thickened.
