Peanut Butter Cheesecake Brownies (AKA PB Cream Cheese Brownie Bars)

  • 4 oz unsweetened chocolate
  • 3/4 cup butter
  • 3 cups sugar divided
  • 6 large eggs divided
  • 1 cup all-purpose flour
  • 16 oz cream cheese
  • 1 1/2 cup smooth peanut butter


  • Preheat oven to 350º.
  • Prepare a muffin pan or brownie pan by spraying the wells with cooking spray.
  • Microwave the butter and chocolate together for 1 minute. Stir well and microwave for another 30 seconds, then stir. Continue to heat in 30 second increments until the butter and chocolate are all melted and liquid.
  • Add 2 cups sugar to the butter and chocolate. Mix well.
  • Beat 4 eggs in a small bowl and add to the batter. Stir in the flour and mix well.
  • Pour batter into the prepared pan.
  • Soften the cream cheese by putting one block into the microwave for about 45 seconds. Then do the second block.
  • Add the peanut butter, 1 cup of sugar, and 2 eggs to the cream cheese and mix well.
  • Drop peanut butter mixture onto the brownie batter one heaping tablespoonful at a time.
  • Bake for about 20 minutes or until a toothpick inserted in the center comes out with just a few crumbs. Do not overbake.
  • Cool at least 30 minutes. Serve warm. They are also amazing at room temperature.


We have made our brownies in a muffin pan and a fancy brownie pan which are both really nice because each brownie has edges and also they are portioned out perfectly.
