Lucky Charms Pancakes - Easy St. Patrick's Day Breakfast
These fun Lucky Charms pancakes are the perfect St. Patrick's Day breakfast. Wake your little leprechauns up with green pancakes filled with Lucky Charms marshmallows. The best part is that they're ready in less than 25 minutes!
In a large mixing bowl, whisk together the milk, eggs, and vanilla bean paste until well blended.
Add the pancake mix and stir until just moistened. Some lumps will remain. This is normal.
Fold in ¾ cups of Lucky Charms marshmallows. Please be aware that the marshmallows will melt on the griddle.
Lightly grease the griddle with nonstick cooking spray or some butter.
Using a ¼ cup measuring cup, add the green batter to the griddle. Cook for 3 to 4 minutes, until bubbles form on the top of the pancake. When the edges begin to pull up from the griddle, flip and continue to cook until cooked through.
Serve hot with syrup, remaining marshmallows, and whipped cream.
Notes
I picked through a box of Lucky Charms to make this recipe, and I felt super guilty throwing away all that cereal just to use the marshmallows. If you'd rather, you can get (slightly less fun) dehydrated marshmallows on Amazon for pretty cheap and not have to throw out most of a box of cereal.
