  • Stir everything together in a medium bowl.
  • Pour into an airtight container and refrigerate for a minimum of 4 hours to overnight. It takes that long for the oats to absorb the liquid and soften.
  • Remove oats from the refrigerator and heat for one minute in the microwave. Stir well before serving.
  • If you want a little extra crunch, you can top the heated oats with crushed graham crackers. For a little extra sweetness and an authentic pumpkin pie experience, top with a bit of Cool Whip or whipped cream.

Notes

Make sure you are using pure pumpkin puree and not pumpkin pie filling.
This recipe tastes best with vanilla bean paste, but you can substitute pure vanilla extract in a pinch.
