Instructions
Preheat the oven to 350ºF.
Crack the eggs into a large mixing bowl and beat them. Then add all the other ingredients except for ⅓ cup of pizza sauce (that is reserved for putting on top of the meatloaf).
Using your hands, combine all the ingredients together until the egg, spices, vegetables and breadcrumbs are well blended with the meat. If the mixture feels dry, add ¼ cup of water and mix that in.
Transfer the meat mixture to a loaf pan or form it into a loaf on a baking sheet. Pour the reserved pizza sauce over the top of the meatloaf.
Bake in the pre-heated oven for one hour, or until it reaches an internal temperature of 155ºF.
Remove from the oven and let it rest for 15 minutes before slicing.
Serve with a drizzle of additional warmed pizza sauce and a sprinkle of quartered pepperoni and shredded mozzarella cheese over the top of each slice.
