For the shrimp

  • In a small bowl, whisk together all sauce ingredients.
  • In a large skillet or wok, heat 2 tablespoons olive oil over medium-high heat. Add shrimp to the pan and cook 3 minutes on each side. Season shrimp with ¼ teaspoon salt. At this point, it should be opaque, but slightly undercooked. Remove from pan.
  • In the same skillet, heat another 2 tablespoons of olive oil over medium-high heat. Add asparagus and cook until tender. Season with ¼ teaspoon salt. Sauté another 30 seconds.
  • Add shrimp and lemon sauce into pan. Simmer for 5-6 minutes or until sauce is thickened.
