GERMAN PANCAKE AKA DUTCH BABY

Whether you call it a German pancake, a Dutch baby pancake, or a popover pancake, this quick 15 minute breakfast is delicious and easy to prepare!

Made with eggs, milk, flour, and vanilla, a German pancake has light and slightly sweet flavors. Easy to customize with fruit or savory toppings.

INGREDIENTS

Butter Flour Salt Sugar Eggs Vanilla Whole milk Powdered sugar        (optional)

In a mixing bowl (or blender) combine eggs, milk, flour, salt, vanilla, and sugar. Whisk vigorously until very well combined.

Place a cast iron skillet in the oven for 5 minutes. Then very carefully remove and add butter so it completely melts.

2

Whisk batter one more time and pour into skillet. The popover will not rise if the batter is under-whisked; it is impossible to overwork this batter.

3

Place skillet in the pre-heated oven and bake for 15 or minutes or until puffy and deep golden color.

4

Carefully remove popover from oven (the handle is hot!) and sprinkle lightly with powdered sugar.

The top begins to fall as soon as it’s removed from heat so plan to serve immediately.
