Rice Fresh limes Olive oil Onions Fresh garlic Black beans Corn kernels Diced green chiles Diced tomatoes with          green chiles Cilantro Shredded cheddar Sour cream

Prepare the rice according to package directions EXCEPT juice the lime and add water to the lime juice to equal what is required for the rice.

Heat olive oil in a medium skillet over medium heat. Add onions and garlic and sauté until fragrant. Add lime juice.

Add black beans, corn, green chiles, and tomatoes and heat until evenly hot.

Remove from heat and stir in the rice and cilantro.

Serve with shredded cheddar cheese and sour cream.
