CHOCOLATE CHERRY CHEESECAKE

This chocolate cherry cheesecake recipe makes a rich, almond-flavored cheesecake with a layer of cherries in the center and a layer of chocolate ganache on top.

This chocolate cherry cheesecake is my favorite and is great for holiday meals with its rich chocolate and sweet cherries.

INGREDIENTS

Oreo cookies Butter Cream cheese Eggs Heavy cream Sugar Almond extract Cherry pie filling Chocolate chips

Chop the cookies in your blender or food processor. Add the melted butter to the cookie crumbs and pulse it a bit more to blend everything together.

Press the cookie crumbs into the bottom and sides of a springform pan. Aim to go about halfway up the sides and make it thin and uniform across the bottom of the pan.

Beat the cream cheese in your mixer until it is smooth. Add the eggs, one at a time, and beat just until they are fully incorporated.

Add ½ cup of the heavy cream along with the sugar and almond extract and beat until the mixture is smooth and evenly blended.

Carefully pour a little more than half of the cream cheese mixture on top of the crust in the springform pan.

Very carefully pour the can of cherry pie filling over the cream cheese mixture and spread it to the edges of the springform pan.

Pour the rest of the cream cheese mixture over the cherry pie filling and smooth it out, again to the edges of the pan.

Bake your cheesecake for 1 hour and 15 minutes.

When the cheesecake is cool, prepare the ganache according to the instructions.

Pour the ganache over the top of the cheesecake, still in the springform pan. Put the whole thing in the fridge to chill over night.
