Zucchini Parmesan

Zucchini Parmesan

I’m seeing zucchini recipes everywhere lately. I love seeing how other people use them during this time of year when they’re coming out our ears. We’ve eaten enough zucchini this summer to make us green. Zucchini eggs. Zucchini muffins. Zucchini cake. Cheese stuffed zucchini. Chicken and cheese stuffed zucchini. Zucchini with pasta and chicken. Pasta primavera. Zucchini bake. Veggie lasagna. Ratatouille. Batter-dipped zucchini. Pan fried zucchini. Grilled zucchini. I’m sure we’ve eaten it other ways, too, but I can’t remember them all. I made up this recipe to use some of our glut of the fabulous vegetable after we tired … Read more

Garden Pasta

Garden season is upon us, and I couldn’t be happier. Joe is battling a groundhog for dominance in his newly expanded garden, but the hot, rainy weather is helping our plants to move right along. On top of that, we frequent a few local farmers’ roadside stands to pick up things that aren’t yet ready in our own garden. Suffice it to say that we’re eating a lot of whole, healthy, local food, and we love it. Today, Grace and I picked up 2 pounds of peas, a pint of black raspberries, and 3 small zucchinis from a farm stand … Read more

We had the opportunity to try out Tyson Grilled & Ready Chicken Breast Strips this week, and they fit the bill perfectly. Cajun Style Beans and Rice

I spent 10 years of my life as a vegetarian. I loved being a vegetarian. Even today, I sometimes feel like an icky traitor for eating meat. I’m aware that I’m weird. Just play along. I feel a special allegiance to meatless cuisine, and we eat meatless meals often around here. On and off over the last 12 years, Joe and I have eaten this beans and rice recipe for supper pretty often. We go in spurts, and we’ll eat it weekly for months and months and then put it away because we’re sick of it, and then get it … Read more

Cheese Stuffed Zucchini

cheese stuffed zucchini

In my neck of the woods, stuffed vegetables usually involve hamburger, tomato sauce and rice, or crab meat. Neither of these fillings really thrills me, and I often avoid them. At the same time, I love veggies, especially when they are fresh from my garden.  I love to make them the focal point of a meal. A few years ago, I came up with this recipe in response to a glut of zucchini and summer squash from my garden. This filling is wonderful and would be tasty stuffed inside any number of foods, including bread, tomatoes, other squash, mushrooms, and … Read more

Zucchini Eggs

How to make the best zucchini eggs recipe for breakfast or brunch - This simple and easy omelette or frittata uses fresh veggies to make a healthy, paleo, low carb, gluten free dish. Sprinkle with shredded cheese to serve.

Earlier this week, I cooked eggs for Gracie and I to eat for brunch. I prefer my eggs over hard, so that’s how I made them. This morning, Gracie requested yellow eggs. I guess that was an unsubtle hint that she prefers her eggs scrambled. I didn’t want to eat just a scrambled egg, so I threw some fresh veggies in the pan to sauté. I intended to make a frittata, but it stuck to the pan and turned into scrambled eggs with veggies. The results were delicious.   Delicious!
